A carefully selected microlot from Cesar Buesaquillo’s La Esmeralda farm in Buena Vista, Quindío, Colombia. Only the ripest cherries are hand-sorted and floated before undergoing 30 hours of underwater fermentation, allowing sugars and organic acids to develop a balanced interplay of sweetness and brightness. The coffee is then dried for 12 days on parabolic dryers, in thin layers to ensure even airflow and gentle, consistent drying.

Expect rich caramel sweetness layered with juicy apricot and bright mandarin zest, while cacao nibs add a deep, bittersweet edge. As the cup cools, the citrus notes become more vivid, complementing the mellow stone-fruit sweetness and leaving a smooth, cocoa-like finish.

Water used during washing is recycled and reused to float subsequent batches of cherries, helping reduce water consumption during processing.

Process: Washed, 30h Underwater Fermentation

Notes: Caramel, Apricot, Cacao Nibs, Mandarin

Variety: Castillo

Harvest: 2026

Altitude: 1750-1800 masl
