A limited experimental lot from Jairo Arcila’s Santa Mónica farm in Quindío, Colombia. During a 48-hour dry anaerobic fermentation, watermelon is added to the tanks, bringing a distinctive fruity character to the coffee. After fermentation, the coffee is pulped and washed, preserving a clean, vibrant cup.

Expect juicy watermelon and sweet honeydew melon, balanced by bright lime acidity and a smooth chocolate undertone. As the cup cools, the fruity sweetness becomes more pronounced, leading into a delicate, refreshing mint finish.

Wastewater from processing is filtered through a series of tanks and used to irrigate vetiver grass beds, helping prevent contaminated water from being discharged into the environment.

Process: Washed, Anaerobic with Watermelon (48h)

Notes: Watermelon, Honeydew Melon, Mint, Lime, Chocolate

Variety: Castillo

Harvest: 2026

Altitude: 1450–1500 masl
